French- style apple tart.

Torta di mele francese.

French – style apple tart is a tart I did few months ago and I still have to publish.

This is the right moment to do so as I am alone at home with all the comforts: Christmas tree on, new laptop, Pandoro ( traditional raised Christmas sweet) on the table.

Recipe comes from “ Pies & puds” from Paul Hollywood, I must say I am not a frangipane cream fan but if you love it this tart is for you!

Have to keep the post short as I have some things to do at home after this ” blog break” plus my son has do to his homeworks and it means troubles…LOL

You may hear me roar from where you are!

Let’s jump to the recipe!

  • 1 tsp lemon juice
  • 2 tbsp very cold water

  • 100 g unsalted butter, softened
  • 100 g caster sugar
  • 2 medium eggs
  • 50 g plain flour
  • 75 g ground almonds
  • 2-3 drops almond extract

For the apples:

  • 3 medium eating apples
  • 15 g cold butter in small dices
  • 2 tbsp caster sugar

Instructions

To make pastry:

  • Mix flour with icing sugar then add butter and rub with fingertips ( or using a food processor) until you have crumbles.
Beat egg with lemon and water, add it to the pastry and knead until you have a smooth ball.
Wrap in cling film then let it rest in fridge at least 15 minutes.
  • Heat oven at 200°C and put into a baking tray.
Take a cake tin of 25 cm diameter about 3 cm deep.
  • Roll out the dough in a thin layer and line the cake tin with the pastry.

For the frangipane cream:

  • Beat butter and sugar until fluffy, add flour, almond flour and almond extract, mix well and spread over the pastry.

For the apple cover:

  • Peel, core and thinly slice apples, from edges to centre cover the cake with slices, add the butter here and there.
Put in the oven over the heated baking tray and bake for 15 minutes, then sprinkle sugar on top and bake for mere 10- 15 minutes.
  • Let the tart cool completely and serve with ice cream or whipped cream or clotted cream.
