Spring onion & red chili cornbread.
Instructions
  1. Preheat the oven at 225° F and grease a tin. Mix all the ingredients together, pour the batter into the tin and bake for about 30 minutes.
  2. Let the bread cool then remove from the tin. Cut in chunks or slices ( it's quite crumbly), tast it a little if you want and pair it with soups, grilled meat or whatever you like.

Instructions
  1. Mix at first all the liquid ingredients, then add dry ones, sifted. Mix well.
  2. Heat a skillet, add some butter, when hot pour a spoonful or two of batter. When you see the first bubbles on top of the pancake turn it on the other side.
  3. Do it with all the batter, serve with chocolate syrup, maple syrup or caramel sauce.

  1. Melt yeast into lukewarm water, knead all the ingredients except egg and form a smooth loaf.
  2. Let the loaf rise in a bowl, covered with cling film, for about one hour.
  3. Spread the dough with a rollpin, about 1/2 inch tall. Cut rectangles, the size you like ( small are ok as finger food, bigger can be cut in half and stuffed like a sandwich; if you prefer you can bake it as a single, big focaccia), brush with beaten egg and let them rise again into the baking tin covered with a cloth for about 30- 40 minutes.
  4. They will not rise a lot, it's ok. Bake at 356°F for 20-30 minutes, they have to reach a gold colour but pay attention as they can turn black quite quickly.

  1. Mix all the pastry ingredients untill you have a smooth loaf, put it in the fridge for 3-4 hours. After this time spread pastry with a rollpin and cover a round shaped pan about 8 inches diameter. Keep refrigerated.
  2. Put sugar and water into a saucepan, let it melt and caramel until gold, do not mix.
  3. When gold add the honey and hot but not boiling milk cream, mix well and add nuts.
  4. Let it warm a little.
  5. Spread the shortcrust in the tin, make the edges about 1 inch tall.
  6. Pour the filling and use pastry leftovers to make decorations.
  7. Put them on the cake and bake at 350°C for 20-25 minutes.
  8. The filling turns brown in minutes so look at it closely while baking. Wait until cold to serve.

  1. Wash eggplants, with a toothpick make some holes on each one and bake them at 360°F untill you can easily
  2. insert a toothpick inside.
  3. Carefully peel each eggplant and, with the help of a spoon, put the pulp into a pan with oil, garlic, salt and pepper.
  4. Cook untill water in excess dry out, let it cool for a while then add egg, minced basil and marjoram and cheese.
  5. Add now breadcrumbs untill you have a mixture that stick together and form patties, the size of a mini burger.
  6. Dust them in flour and bake at 400°F on a greased pan for about 20 minutes.
Recipe Notes

You can deep fry them but of course you can call them "light" then! You can serve them hot or warm with a good tomato sauce.
