  1. Cut apple in tiny cubes and mix it into the meat with yolks and a generous pinch of salt and pepper. Form meatballs the size of a big walnut and roll them into the flour.
  2. Melt the butter in a frying pan, add chopped onion and let it sautee until soft; add meatball, let them get brown gold on all sides then add the sugar and white wine keeping fire high for a minute.
  3. Keep cooking on low fire, with a lid on, for about 20 minutes. I think they are better warm than hot.

  1. Put spinach in a pan with garlic, oil, salt and pepper. Cook until all the water is evaporated and spinach are cooked.
  2. Mix in a bowl breadcrumbs, feta cheese, Parmesan and salt and pepper to taste. You have to end up with a sandy and crumbly mix, you can add a little oil if the mix is too dry.
  3. Put spinach in a ovenproof pan, cover with crumbles and bake at 356°F until the crumble is golden.
Recipe Notes

Of course you can use fresh spinach, it's even better and the making off is the same, you have to wash and rinse well the vegetables then put them in the pan until all the water is gone and the spinach are cooked.

You should use about 31 oz fresh spinach.

You can also sautee spinach in the pan with butter and some Parmesan to enrich this side dish.

  1. Mix flours, pecorino cheese, soft butter plus some wine if needed until you have a smooth dough.
  2. Form small balls of dough, each of about 8-9 grams ( weigh them on a kitchen scale) and put them on a baking tray and bake at 356°F for about 15- 20 minutes.
  3. Set aside and whip milk cream, mix it with goat's cheese, chopped chives, salt and pepper. Put this cream into a sac- a- poche.
  4. When cookies are cold squeeze the cream on half of them, then close these with the other cookies and roll them into pistachio crumbs.
  5. Fill them with cream only before serving.

  1. Mix very well pumpkin puree, ricotta cheese, Parmesan, nutmeg, salt and pepper. In a separate bowl beat egg whites with an extra pinch of salt until white and fluffy.
  2. Add the pumpkin mixture to egg whites, mix folding gently until well combined.
  3. Pour mixture into a muffin tin, you should end up with 12-14 cakes. Sprinkle every cake with mixed seeds.
  4. Bake at 356°F for 25-30 minutes, serve cold or room temperature.

  1. Boil chopped vegetables in salted water untill thender
  2. In a pan sautee smoked bacon until gold.
  3. Smash vegetable with a fork, add sour cream and bacon then mix well.
  4. As usual, when I make this kind of "unconventional" turnovers, I make them quite small so make pieces of dough of about 70-80 gr, spread them with a rollpin and put filling inside. Close and cook on a hot skillet but take care to take the heat low because turnovers need time to cook, if the heat is too much they burn.
  5. This kind of turnover is better if eaten warm and not hot.
