Easy Italian Beef Rolls with Cream Cheese and Chives

Thin beef rolls filled with cream cheese and fresh chives, served with white wine pan sauce.

Some of the simplest and most enjoyable recipes don't come from cookbooks or magazines, or even directly from our mums.

Sometimes, you're having dinner with friends and someone tells you about their grandmother's beef rolls.

Simple little rolls, quick to prepare with ingredients you already have in the fridge.

That friend was Elia. Our dinner together happened many, many years ago, but his recipe has stayed in my kitchen ever since, and I have a feeling it will be there for a long time to come.

Why Sangiovanni beef rolls? Sangiovanni was the surname of the character Elia played in a role-playing game we both used to take part in.

Those were the good old days of plans and strategies, late nights at the computer and live events. Through that game, I met some wonderful people. I'm still close friends with some of them, while others remain fond, nostalgic memories.

After this little trip down memory lane, and a big thank-you to Elia, it's time to share the recipe for these delicate beef rolls. They're easy to make and popular with children, too.

  • Total time: Approximately 25 minutes

Ingredients

  • 12 thin slices of beef carpaccio

  • Fresh chives, finely chopped, plus extra to serve

  • 1 glass of white wine

  • 4 tablespoons olive oil

Method

  1. Lay a slice of beef on a chopping board and spread it with an even layer of cream cheese.

  2. Sprinkle with chopped fresh chives, then roll the beef up tightly. Secure the roll with a toothpick.

  3. Repeat with the remaining slices of beef.

  4. Heat the olive oil in a frying pan. Add the beef rolls and brown them over a high heat.

  5. Pour in the white wine and let it evaporate. Lower the heat and finish cooking for another 4–5 minutes, or until the beef is cooked to your liking.

  6. Serve hot, spooning over the delicious pan juices and finishing with a handful of freshly chopped chives.

These little beef rolls are proof that a good recipe doesn't need a long list of ingredients or complicated techniques. Sometimes, all it takes is a friend willing to share a family favourite.
