If there is one fictional family I would happily join for dinner, it has to be the Weasleys. Their home may be chaotic, their kitchen full of unexpected magic, and their children always getting into trouble, but there is one thing you can count on: a generous, comforting meal.
I have always enjoyed the Harry Potter books and films, although I would not call myself a die-hard fan. I don't own a collection of magical merchandise or spend my evenings writing fanfiction, and I have never quite decided which Hogwarts house I would belong to. Slytherin or Ravenclaw, perhaps!
Still, when I spotted The Unofficial Harry Potter Cookbook by Dinah Bucholz on sale, I couldn't resist buying it. The book is full of recipes inspired by British cooking and the food described throughout the series. I tried a couple of dishes, and while one didn't particularly impress me, these onion meatballs were a real success.
They are tender, savoury and served in a rich onion gravy that practically begs for thick slices of bread or a generous helping of mashed potatoes. Serve them in a rustic casserole dish in the middle of the table, and you have the perfect comforting meal for a chilly evening—or a Harry Potter-inspired Halloween dinner.
Wands, Sorting Hats and Butterbeer are optional. If you happen to have any spare magical kitchen equipment, though, do let me know!
Molly Weasley’s Onion Meatballs Recipe
Yield: 6 servings
Prep time: 15 minutes
Resting time: None
Cooking time: Approximately 25–35 minutes
Ingredients
For the meatballs:
- 500 g minced beef
- 60 g breadcrumbs
- 1 large egg
- 1 onion, finely chopped
- A handful of chopped fresh parsley
- Salt and black pepper, to taste
- A pinch of ground nutmeg, optional
For the onion gravy:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 tablespoons plain flour
- 500 ml chicken stock
Method
- Place the minced beef, breadcrumbs, egg, finely chopped onion and parsley in a large bowl. Season with salt and black pepper, adding a pinch of nutmeg if you like. Mix until all the ingredients are evenly combined.
- Shape the mixture into meatballs roughly the size of ping-pong balls.
- Heat the olive oil in a large, heavy-based pan or casserole dish. Add the chopped onion for the gravy and cook gently until softened and lightly golden.
- Add the meatballs to the pan and brown them on all sides, turning them carefully so they hold their shape.
- Sprinkle the flour over the meatballs and stir gently, making sure it is evenly distributed and does not form lumps.
- Gradually pour in the chicken stock, stirring carefully to combine it with the flour and the onions. Bring the liquid to a gentle simmer.
- Cook uncovered over a low heat for approximately 20–25 minutes, turning the meatballs occasionally and stirring the gravy gently. If the sauce becomes too thick before the meatballs are cooked through, add a little water or stock.
- Check that the meatballs are thoroughly cooked in the centre and that the gravy has thickened to your liking. Serve hot, straight from the casserole dish.
Notes
- Don't skip the browning. It adds flavour to both the meatballs and the onion gravy.
- Keep the heat gentle. Once the stock has been added, a gentle simmer helps the meatballs cook evenly without breaking apart.
- Adjust the gravy. Add a splash of stock or water if it becomes too thick; if it is too thin, let it simmer uncovered for a little longer.
- What to serve with them: Thick slices of crusty bread are ideal for mopping up the gravy. Mashed potatoes are another excellent choice, especially for a cosy autumn or winter dinner.
These Molly Weasley-inspired onion meatballs are hearty, homely comfort food, just the sort of dish you can imagine being served at the Burrow. Put the casserole in the middle of the table, pass around the bread and let everyone help themselves. No magic required!
