Easy Chocolate Brownies with Dark Chocolate Chunks

Homemade chocolate brownies cut into squares with dark chocolate chunks and a rich cocoa-coloured centre.

Some chocolate desserts are worth making simply because they are so easy to share. These homemade chocolate brownies are rich in dark chocolate, made with cocoa powder and dotted with extra pieces of chocolate for little pockets of melted goodness.

This is a straightforward recipe with everyday ingredients and no special equipment required. You don't need a stand mixer or complicated techniques: just melt some chocolate, mix the batter, fold in the remaining chocolate pieces and let the oven do the work.

The result is a chocolatey tray bake that you can cut into squares and serve with coffee, pack into a lunchbox or enjoy as an afternoon treat. If you love homemade chocolate desserts, this is a recipe to keep close at hand.

What Makes a Good Chocolate Brownie?

Brownies sit somewhere between a cake and a chocolate bar. Some are light and cakey, while others are dense, moist and almost fudgy. The difference depends on the proportions of chocolate, butter, sugar and flour, as well as the baking time.

This recipe uses both melted dark chocolate and unsweetened cocoa powder, giving the brownies a deep chocolate flavour. Extra chocolate chunks are folded into the batter before baking, adding texture and making every square a little different.

Unlike many traditional American brownie recipes, this version uses icing sugar rather than granulated sugar. It is a simple homemade variation, with a short ingredient list and a method that is easy to follow.

Tips for Making Homemade Brownies

Choose good-quality dark chocolate. Chocolate is the main flavour here, so use one you enjoy eating. A dark chocolate with around 50–70% cocoa solids is a good starting point.

Let the melted chocolate cool slightly. It should be fluid but not hot when added to the butter, sugar and eggs. Very hot chocolate can affect the mixture.

Sift the flour and cocoa powder. This helps prevent lumps and makes it easier to combine the dry ingredients without overmixing.

Don't overbake. Brownies continue to set as they cool. Start checking before the end of the suggested baking time, especially if your pan is smaller or your oven runs hot.

Let them cool before cutting. Warm brownies are fragile. Allowing them to cool makes it much easier to cut neat squares without crumbling.

Easy Chocolate Brownies Recipe

Rich homemade brownies made with dark chocolate, cocoa powder and extra chocolate chunks.

Yield: 8–12 squares, depending on how you cut them
Preparation time: 15 minutes
Cooking time: Approximately 20 minutes
Cooling time: Allow to cool completely before cutting

Ingredients

  • 230 g dark chocolate, chopped

  • 160 g softened butter

  • 150 g icing sugar

  • 2 eggs

  • 80 g plain flour

  • 30 g unsweetened cocoa powder

  • 1/2 teaspoon fine salt

Method

  1. Prepare the chocolate. Divide the chopped dark chocolate into two equal portions. Melt one half in a heatproof bowl over a pan of gently simmering water, making sure the bottom of the bowl does not touch the water. Alternatively, melt it in the microwave in short bursts, stirring between each one. Set aside to cool until lukewarm.

  2. Mix the butter and sugar. In a large bowl, beat the softened butter with the icing sugar until well combined and creamy.

  3. Add the eggs and melted chocolate. Beat in the eggs, one at a time, then gradually mix in the melted chocolate. Make sure the chocolate is not hot before adding it.

  4. Add the dry ingredients. Sift the flour and cocoa powder into the bowl. Add the salt and stir gently until you have a smooth, evenly mixed batter. Avoid mixing more than necessary.

  5. Fold in the remaining chocolate. Add the reserved chopped chocolate and distribute it evenly through the batter.

  6. Prepare the baking pan. Line a rectangular baking pan, approximately 20 × 30 cm, with baking parchment. For easier lining, you can lightly dampen the parchment and squeeze out the excess water before placing it in the pan.

  7. Fill the pan. Spread the batter evenly in the prepared pan. Bake in a preheated oven at 180°C (350°F), using conventional heat.

  8. Bake the brownies. Bake for approximately 20 minutes, checking the centre towards the end of the cooking time. If following the original method, cover the pan loosely with aluminium foil for the first 15 minutes and remove it for the final 5 minutes. For a more traditional brownie top, you can bake uncovered instead.

  9. Cool and cut. Remove the pan from the oven and leave the brownies to cool completely before lifting them out and cutting them into squares.

Recipe Notes

  • Pan size matters. A 20 × 30 cm pan produces relatively thin brownies. If you prefer thicker squares, use a smaller square pan, such as a 20 × 20 cm pan, and allow for a longer baking time.

  • Check the centre carefully. A toothpick inserted into the middle should come out with a few moist crumbs, rather than completely clean, if you want a moist result. Avoid waiting until the brownies look completely dry.

  • About the foil: Covering brownies for most of the baking time is not the usual method for achieving a crackly top. Baking uncovered is a useful alternative, but keep an eye on the surface and centre.

  • For serving: Enjoy the brownies on their own, with a cup of coffee, or slightly warmed with a scoop of vanilla ice cream.

  • For storage: Once completely cool, keep them in an airtight container at room temperature for a few days.

These easy chocolate brownies are a lovely example of how a few familiar ingredients can become something special. Cut them into small squares for sharing, or make them part of a homemade dessert spread alongside your other favourite bakes.
