Walnut and fig breadsticks.

Servings: 8


  • 250 g strong bread flour plus some for dusting
  • 7 g dry instant yeast ( one bag)
  • 1 tsp salt
  • 1 tbsp olive oil
  • 175 ml cold water
  • 75 g dried figs chopped
  • 50 g finely chopped walnuts


  • Put the flour in a bowl and add yeast on one side and salt on another, then add oil and 3/4of the water.
    Mix with hands then add the rest of the water ( you may not need all the quantity) until you have a soft but not too sticky dough.
  • Knead for 5-10 minutes until you have a smooth and elastic ball of dough, cover with cling film and let it rise for 1 hour.
  • Heat oven at 430°F and line two baking tray with baking paper.
    Put the dough on a board, fold some times to let the air out; shape the dough in a rectangle and sprinkle walnuts and chopped figs.
    Fold again the dough to incorporate walnuts and figs.
  • Divide the dough n 16 pieces and roll them to have breadsticks about 10/ 12 inches long.
    Bake for about 12- 15 minutes until gold brown.
