Put the flour in a bowl and add yeast on one side and salt on another, then add oil and 3/4of the water.Mix with hands then add the rest of the water ( you may not need all the quantity) until you have a soft but not too sticky dough.
Knead for 5-10 minutes until you have a smooth and elastic ball of dough, cover with cling film and let it rise for 1 hour.
Heat oven at 430°F and line two baking tray with baking paper.Put the dough on a board, fold some times to let the air out; shape the dough in a rectangle and sprinkle walnuts and chopped figs.Fold again the dough to incorporate walnuts and figs.
Divide the dough n 16 pieces and roll them to have breadsticks about 10/ 12 inches long.Bake for about 12- 15 minutes until gold brown.
